Culinary Technique Classes
Cruisers, foodies, at home chefs, or anyone looking for a unique activity that gives you a break from the sun, come join me, the Cozumel Chef, for one of our Culinary Technique Classes. Great for couples, parties or anyone interested in honing at home culinary skills, we strive to provide accessible, stress free hands-on instruction. Our classes take place in your vacation rental or in our air-conditioned kitchen. In each class, we will prepare one dish together which, if you choose, we can then use as part of a larger dinner we create for your family and friends.
Culinary Skills 101
Cost: $75/person (student); $35/person (dinner guest)
Where to begin? How do you prep for a dinner? How can I be efficient in the kitchen without making the task laborious and mundane? We will take you through an introductory course to the essential tools and techniques used to put a fantastic meal together.
This class will take you through preparation of your “mise en place” so that when it comes time to the cooking you will be well on your way to creating meals to remember. This class will also be an introduction to butchering. You will learn to filet a fish and from this we will create a meal with the vegetables you “turned” and the fish you filleted.

- How to fillet a fish
- “Turning” of vegetables
It’s all about Chicken
Cost: $75/person (student); $35/person (dinner guest)
Did you see the movie Julie & Julia? Remember the scene where Julie freaked over the last task of “deboning a duck”? Well, have no fear. This course will take your through a hands on step-by-step process on how to break down a chicken into useable parts. You will learn different techniques of preparing chicken and how to make a basic chicken stock so nothing goes to waste. Following this we will prepare a classic French dish Poulet rôti Grand-mère.

- How to debone a chicken
- How to truss a chicken
- How to create chicken stock
- How to roast a chicken
- Proper grilling techniques
- How to create a simple sauce

If you are not interested in taking one of the courses we also offer private lessons. If you have a particular area of interest let us know as we would be happy to provide insight, step-by-step instruction and inspiration to get you in your culinary clogs (its what the “chef’s” wear even though not the most stylish pair of shoes). We can take you through how to plan a three-course meal, what ingredients to buy (we will take a trip to the local markets) and how to go about plating like a professional to impress your friends and family.
