Chef’s Choice

Ever order something at a restaurant and the waitstaff asks how would you like that done and you respond…”whatever the chef recommends”? Well… you are in for a treat. By selecting an option from the “Chef’s Choice” menu you get the opportunity to taste what inspires the chef. Choose your main protein and leave the rest to Cozumel Chef. Below is an offering of what has been cooking in the chef’s kitchen at home that you can choose from.

Caribbean Squash Soup

Fresh ginger | Squash | Coconut cream | Grilled chipotle marinated shrimp| Walnut whipped cream | Roasted red pepper flakes

Ensalada de Romaine

Romaine lettuce | Shaved parmesan | Toasted pine nuts | Spring radish disks| Extra-virgin olive oil

Shrimp “Cocktail”

Sauteed prawns | Creamy avocado puree | Red wine glazed pear onions | Red wine reduction

Negro Modelo Cerveza Braised Short-Ribs

Pork or Beef short-ribs braised in dark Mexican lager | Mexican crème espesa mashed potatoes | Pineapple-mango chutney

Yucca frites| Negro Modelo sauce

Cozumel Fish Stew

Braised seasonal fish | Chorizo | Clams | Spinach | Saffron potatoes
